I have actually never done this. I have never prepared a fancy dinner for me and another. I wouldn't consider doing it purely on the basis of my lacking cooking skills.
If I could really, really cook though… yeah. Yeah, I would do something nice like this for me and another. :)

What would you serve/order for a fancy dinner?

I'd go with salmon filet, maybe some eggs with caviar, something that is easy to eat without making a mess, but is also somewhat extravagant. Historically seafood has been low class, but with industrialized meat farming it is now comparatively pricey.
